  • ¾ cup (255g) mild honey (such as clover or orange blossom)
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour, spooned and leveled
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger (optional)
  • For the honey glaze (optional):
  • ½ cup (60g) powdered sugar
  • 2 tablespoons (42g) honey
  • 12 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Prep the apples: Peel, core, and chop apples into ½-inch cubes (about 2 cups). Toss with 1 tablespoon of the measured flour to prevent sinking.
  3. Melt the butter and let cool for 5 minutes.
  4. In a large bowl, whisk together melted butter, honey, granulated sugar, eggs, and vanilla extract until smooth and slightly lighter in color, about 30 seconds.
  5. In a separate small bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  6. Add dry ingredients to wet mixture. Fold gently with a rubber spatula until just combined—a few lumps are fine. Do not overmix.
  7. Gently fold in the floured apple cubes until evenly distributed.
  8. Scrape batter into prepared pan and spread evenly.
  9. Bake for 40-45 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  10. Cool in pan on a wire rack for 15 minutes. Run a knife around the edge, invert onto rack, remove parchment, and flip right-side up to cool completely.
  11. For the glaze: Whisk together powdered sugar, honey, and 1-2 tablespoons milk/cream until smooth. Drizzle over completely cooled cake.
